Which olive variety do we cultivate at Karepidis Estate and what are its main characteristics?
In our privately owned groves, we cultivate exclusively the premium Greek variety Koroneiki. Globally recognized as the "queen" of olives, Koroneiki is selected worldwide for crafting top-tier olive oils.

What does it mean that your olive oil is a product of "vertical production" and why does it matter?
Vertical production means that we completely control every single stage of the process, from the roots of the trees to the finished bottle on the shelf. Our olive oil is never a blend from various unknown producers or different regions.

How fast are the olives milled after they are harvested?

What is cold extraction and why is it a non-negotiable rule for us?
Cold extraction means that the malaxation and milling of the olives at our facility are strictly conducted at temperatures below 27°C.

What is the two-phase system of our olive mill and how does it benefit the olive oil?
Our state-of-the-art olive mill operates exclusively with a two-phase centrifugal system, which is globally recognized as the gold standard for eco-friendly, premium-quality oil extraction.
- Zero Added Water: Unlike older three-phase systems, the two-phase process requires absolutely no external water addition during separation. This is crucial because polyphenols are water-soluble; adding water would literally "wash away" and waste a massive portion of these valuable compounds into the wastewater.
- Maximum Antioxidant Retention: Because we do not flush the paste with water, all the health-protective polyphenols remain highly concentrated within our olive oil, securing our exceptionally high lab-tested chemical analysis scores.

How do you ensure that the olive oil maintains its quality until it is bottled?

- 19 Underground Tanks: We feature 19 state-of-the-art underground tanks that offer the ultimate natural insulation from the outdoor environment.
- Constant 18°C Temperature: Thanks to their underground design, the temperature is naturally and consistently maintained at 18°C all year round, which is the perfect climate to prevent the degradation of the olive oil's elements.
- Nitrogen Sealed Tanks: Our stainless-steel tanks are injected with nitrogen (an inert gas) which displaces oxygen, completely preventing oxidation and locking in the sensitive health-protective polyphenols.
- Massive Capacity: Our modern infrastructure boasts a total storage capacity of nearly 1,000 tons, allowing us to manage our harvest with complete autonomy and safety.
How is our olive oil bottled and how does the packaging protect its premium quality?
Bottling is the final stage that seals a whole year of hard work. At our modern, proprietary facility, the bottling process is conducted under the highest standards, ensuring that the olive oil reaches your table in the exact pristine condition it left the mill.
- Light & UV Protection: We use exclusively premium, dark-tinted glass bottles that act as a natural shield against ultraviolet radiation and light, effectively preventing photo-oxidation which degrades delicate nutrients.
- Controlled Bottling Environment: During the packaging phase, the olive oil is transferred into the bottles using state-of-the-art mechanical systems, minimizing any contact with oxygen.
- Secure Flow Caps: Our bottles are sealed with specialized controlled-flow, tamper-evident caps, ensuring the product remains perfectly airtight and secure after every single daily use.
Do you implement environmentally friendly practices during olive oil production?
