In our olive groves, we follow a philosophy of absolute respect for this heritage. We apply gentle cultivation methods, avoiding heavy soil tillage and the use of chemicals, so as not to disturb the natural balance of the soil and the biodiversity of the area. Before each harvest, we inspect the olives directly on the tree, ensuring their health and the absence of infestations, so that only the highest quality fruit reaches our olive mill.

The Asterousia Mountains, a proud member of the UNESCO World Network of Biosphere Reserves, are far more than a backdrop to our olive groves—they are their eternal protectors. These challenging environmental conditions trigger a natural defense mechanism in the olive tree, forcing it to produce maximum levels of antioxidants (polyphenols).
