For the storage of our olive oil, we utilize 19 private underground tanks—an infrastructure that allows us to control the environment with absolute precision:

  • Constant Temperature: The underground location provides natural insulation, ensuring the olive oil remains steadily below 18°C. This cold storage is vital for the preservation of phenols and aromas until the moment of consumption.
  • Protection from Oxidation: Our tanks prevent any contact with light. By strictly controlling the headspace above the oil, oxygen exposure is minimized, perfectly sealing in the freshness.
